La “5”

Their “pilsener” brewed as an ale

Very fresh and bready aroma with promising pleasant hop aroma. Hazy. Clean wonderful crisp hop flavor and complexity. Bitterness is an enjoyable bite. Perhaps a bit too much for those who like traditional pilsener hop bitterness, but this one is balanced with nice yeast and malt character, making it very drinkable. Brewed with ale yeast, but lacking any notable fruitiness except with yeast character. The more you drink the more you want. Hop bitterness creeps up slowly and back of throat and is somewhat peppery. Nice medium body texture. Very yeast enhanced. For those who love hefe beers this one is great. Very great as a style of “Keller Pils.”



La “9” 7%

Hoppy Red beer. A reflection and influenced by American IPA. Was rated 5 stars by Slow Food Guide.

Pours a light amber with a rich head. Pepper-like phenolic aroma with hops emerge. Flavor is clean and very hoppy. Bitterness is obvious and defines the flavor, but is in balance with malt and body. Nice malt texture, but bitterness headlines this beer. With the type of hops used it is not an aggressive over the top bitterness. Bitterness is flavorful and quenching. Clean aftertaste. Goes great with Italian foods such as simple pasta graced with truffle, also osso bucco, This beer will go with many types of food. Very nice balance. For a 7% beer it is deceivingly light in body, but has just enough malt texture to make you keep coming back for another drink and then another bottle. Initial phenolic is so subtle, that it quickly dissipates.

Big Fucking Trouble

Blanche Bier 4.5% Clearer than Pils . 30% of grain is unmalted local barley, summer, winter wheat and oats. Yeasty aroma is mild. Corian der aroma is evident. Light and very evident fruitiness, like apricots. A very “wheat beer” character. Must be a different yeast than Pils and others. Nice dry overall mouthfeel. Refreshing. More dry and astringent than a typical Belgian style Wit Beer. Wait. Then there is a small amount of pepper-like heat as an aftertaste – must be a secret ingredient that tingles. Overall a delicate cross between German Hefeweizen and Belgian Wit, but with a very Italian artistic overall interpretation. A unique beer and very worth looking for.



BK 6%

L Olmaia “black” beer, “Not a stout. It is birra nera.”

Black. Rich creamy thick long lasting light brown head. More appealing than a classic Guinness head.

Gentle roast malt / barley aroma. Not overdone. Well balanced. No hop aroma emerges. A classic stout between the original at 4 and the export at 7.5% this has the balance of the 4% original Guinness from the 1970s. Robust but not overdone. Very refreshing. Roast malt/barley bitterness is mild, but important part of balance. Mild yeast flavors add to the wonderful character. Excellent stout. Excellent black beer. World class. Very very clean. Nice aftertaste. And the head at the end of the beer is still a thing to marvel at. One of the best “stouts” I’ve ever had.

Great with roasted chestnuts.



Christmas Duck 8%

“walk like a drunk duck”

Made with honey from Olmaia

Dark in the style of “dunkel.” Caramel red brown. A small amount of phenolic in aroma as well as a touch of roasted malt. No phenolic in flavor. Nice balance of delicate roast malt, sweetness and gentle bitterness of roast malt with a small punch of hop bitterness. Pleasant white head persists, Fruitiness of ale emerges with successive sips. At 8% this is not a hot beer, alcohol is deceiving. A very well done special strong dark and lager-like with a touch of ale fruitiness. Fresh and inviting.



Special Limited Edition of a Hibiscus Beer.

2.4 kilos of dried Hibiscus flowers in a 2 hl batch (I think). ??

Aroma has some Brettanomyces fruity complexity, but not intense. Also gentle honey like floral aroma. Acidity of Hibiscus and Brettanomyces merge into an obvious but not intense sourness. Finish is clean and pleasant. Very refreshing. Cleans palate. Quite dry beer. Well done and very nicely balanced with various characters. Very low hop bitterness j ust perceived in aftertaste as a pleasant and refreshing sensation.



ChriGhost 8%

Made once in 2009. Aged in French oak wine barrels for 4 months (wine: Talenti di Montacino?)

Tasted October 2010.

Not carbonated. But slight pressure is released at opening.

Aroma of Wood/Oak/Barrel emerges – but not the vanilla character. Earthy, woody. Fruity aromas are a hybrid of beer and wine. Deep red amber beer. Some Brett character evolves, but not intense. Very good. Like a wine, but better than wine. Complex yet simple. Quite confusing. Very clean aftertaste. A very unique beer. Very enjoyable. Dry but just enough body balance to satisfy.
